The WizKid Continental – Lemon Brown Rice, Golden Potatoes with Veggies and Kidney Stir-Fry

It’s been a while we brought you a mouth-watering cuisine. We repent –absolutely! And in the spirit of repentance, we decided to offer you ‘something light’ to delight yourselves as we wrap up the first month of the New Year.

Ok… ok… ok… it’s a rice dish, I hear you, but this one comes with an amazing twist that will leave you not only smirking your lips but literarily clearing every tiny little bit in your plate… and it’s not because you are saving cost, oh no… when you’ve got something this tantalizing you’d never dream of letting any piece go no matter the size. Amen?

Here you go, a special goodbye January recipe from us to you created by the one and only Chef Economist – Aishat Dauda!

Ingredients:

  • Irish potatoes
  • Kidney
  • Green pepper
  • Spring onions
  • Sweet corn
  • Brown rice
  • Olive oil
  • Lemon
  • Tomatoes
  • Seasoning

Cooking time: Two hours

Directions

Heat the vegetable oil. Wash and drain rice then fry in the oil till it is brown. Put in a pot and add enough water to cook the rice. Add a pinch of salt. Cover and allow it to cook.

Cut the kidney into cube sizes and put in a pot with water, season it, then cover and allow it to cook for twenty minutes.

While you wait on the rice and kidney to get ready, cut the vegetables and Irish potatoes, then you wash them under running water with a pinch of salt.

Strain the rice and kidney separately and keep them aside as you start frying your potatoes.

Add some olive oil in a wok pan and allow it to get hot. Add the vegetables and kidney and mix along with the spices and seasonings. Allow cooking for ten minutes.

Get another pan, add a dash of olive oil, the brown rice, sweet corn and spring onions then stir fry for 5 minutes.

Serve your food in a dish and dress it with sliced lemons and sliced tomatoes.

There it is, something great, something awesome, something finger-licking good just for you. And as you go into the month of February, remember not the former things, nor consider the things of old. For the Lord says behold I am doing a new thing; I will make a way in the wilderness and rivers in the desert! Now isn’t that something absolutely incredible to look forward to?
